slightly bitter but very nice

You have to expect 85% dark chocolate to be at least slightly bitter and these bars are just that. If you are a sweet freak you will hate these bars. I like them. I'm always on the lookout for fair trade organic chocolate brands that do not cost an arm and a leg and ordered a case lot box of these from my food club at a very good sale price.These bars are made from whole ground cocoa beans (cacao) rather than from processed cocoa powder. That makes them more healthy than most. And because of the high cacao content you get a lot less sugar per ounce. AND because they are not sweet and do not melt as smoothly in the mouth as some other brands (ex. Chocolove), I tend to eat less and that is even better for my health (and pocketbook).If you are looking for a dark chocolate to complement a dry red wine, I feel that this is not a good choice.Personally, I'm happy to have the Theo bars in rotation with the other 3 brands which I purchase. If you are not sure about the 85% cacao experience, splurge and buy one bar at a retail store before you order in bulk.
